You can't fully disable Quick Add, but turning off 'See Me in Quick Add' will stop others from seeing you there.

I've done this myself: Open Snapchat, go to your profile, select settings, navigate to 'Who Can…' and disable 'See Me in Quick Add.' It really works!

Just head to your profile, hit the settings gear, find 'See Me in Quick Add' under 'Who Can…,' and toggle it off. Bye-bye, Quick Add!
