Sadly, Roblox doesn't let you turn off activity status completely. You can change your privacy settings to restrict who can see it though!

You can't hide the activity status fully. Change your privacy settings to make it less visible.

You can't actually turn it off, but what you can do is limit who sees your activity status by setting your privacy to 'Friends' or even 'No One' under Settings > Privacy.
