To turn off sound in Pokémon GO, just tap the Poké Ball at the bottom of the screen, go to Settings, and untick 'Music' and 'Sound Effects'. Your ears will thank you!

From personal experience, open the game, tap the Poké Ball, go to Settings, and turn off the sound options. Silence is golden!
