Honestly, I wouldn't turn off auto updates if I were you. Updates are usually there for a reason, like squashing bugs and adding new stuff. Just let it do its thing; the devs know what they're doing.

As someone who's data capped, turning off auto updates saved my life. Just follow the steps in the first answer. Works like a charm and my data plan is no longer crying.

Easy peasy! Just open Steam, click on 'Library', right-click the game you wanna stop from auto-updating, go to 'Properties', then click on the 'Updates' tab. There's a drop-down menu where you can select 'Only update this game when I launch it'. Boom, you're all set!
