VR mode isn't available in Super Mario Odyssey unless you've got the Nintendo Labo VR Kit. Then you can enable it in the game settings.

Sorry to say, but you can't turn on VR mode in Super Mario Odyssey without the Nintendo Labo VR Kit. And not all levels are supported.
