On Android? Open the main chat screen, tap 'More' (the three dots), select 'Archived,' long press the chat, and tap the unarchive icon. Easy peasy!
I just did this yesterday! Go to the 'Archived Chats' section by scrolling up, find the chat, swipe left, unarchive. Done and dusted!
