Simply go to your ship's crew management screen, select the crew member you want to unassign, and click 'unassign'.
If you're looking to reassign a crew member in Starfield, open your ship's menu, go to the crew tab, and deselect the crew member from their current role. Then, assign them to another one or leave them unassigned!
