I did this last week! Go to the game鈥檚 settings, select 'Account', and then click 'Unbind' next to Google. Make sure you鈥檝e got your progress saved elsewhere.

Honestly, it's risky to unbind without backing up your progress. But if you must, go into settings, account tab, and unbind Google.
