Open the buddy menu, tap the two arrows icon to swap and choose a different Pokemon. Done!

To unbuddy a Pokemon in Pokemon GO, tap on your buddy's icon at the bottom-left of the screen, then tap the 'swap buddies' button and select a new Pokemon.

From my experience, you just need to tap on your buddy's face at the bottom, then hit 'Swap Buddies.' Choose a new one and voila!
