From my experience, just go to your companion's inventory, click on the armor you want to unequip, and that should do the trick.
You can unequip follower armor by going into their inventory and simply clicking the armor piece you want to remove. Simple as that!
Just click on your companion’s armor in their inventory screen, boom, unequipped!
