You should be able to unequip items by hitting the 'Tab' key to open your inventory, then drag the item back into your bag. Easy peasy!
Click on the item in your hotbar or inventory and you should see an option to unequip it.
From my experience, just opening your inventory and right-clicking the item does the trick. Never had an issue with it.
You don't need some complex method. Just go to your inventory and drag the item out. Done!
