Here's what you do: Head to the Game section on the XMB (cross-media bar), find your game, press the Triangle button, and choose Delete. Confirm, and you're good to go!

Easy peasy! Just go to the Game tab on the XMB, scroll to the game you want to delete, press the Triangle button, and select Delete. Voila!

From personal experience, deleting games on the PS3 is a breeze. Just hit the Triangle button on the game you want to remove in the Game tab, select Delete, and confirm. Done in seconds!
