You can't directly uninstall system updates on a PS3. However, if you're talking about game updates, just delete the game data from the Game Data Utility in the XMB menu.

If you want to uninstall game updates, go to Game Data Utility and delete the game's data. System updates, though? No can do, my friend.

Deleting game updates is easy: go to Game Data Utility, find the game, and press triangle to delete. System updates are permanent, though!

Unfortunately, there's no official way to roll back system updates on a PS3. For game updates, navigate to Game Data Utility and delete the specific game's data.
