On your Xbox 360, you can uninstall updates by going to the System Settings -> Storage -> select your storage device -> press the Y button for Device Options -> select 'Clear System Cache'. This will remove the updates from your console!

You can also uninstall updates for individual games by deleting the game from your hard drive and then reinstalling it without connecting to Xbox Live.

Actually, you can't completely uninstall updates on an Xbox 360. Clearing the system cache is your best bet to remove some update data.
