Easy peasy! Go to Settings > Apps > Apps & features, then find Xbox Game Bar, click the three dots next to it, and select 'Uninstall'.

Why bother? Just disable it. Go to Settings > Gaming > Xbox Game Bar and toggle off 'Open Xbox Game Bar using this button on a controller'.

Heya! Just open PowerShell as an admin and run: Get-AppxPackage Microsoft.XboxGamingOverlay | Remove-AppxPackage. Boom, it's gone!

From my own experience, using PowerShell worked best. Just take the command Get-AppxPackage Microsoft.XboxGamingOverlay | Remove-AppxPackage and run it as admin.
