I had to contact Microsoft support last time I did it. They walked me through unlinking my account step by step. Worth a shot!
Just delete the game data associated with the Microsoft account. It should prompt you to log in again next time you start the game.
You can't actually unlink it directly on the PS4. Instead, you must sign in to your Microsoft account on a web browser and look for connected devices or accounts in the settings to remove the PlayStation link.
