Go to the PUBG Mobile settings, find the 'Account' section, and select 'Unlink' next to your Gmail account. Easy peasy!

You can unlink by going into your phone settings, finding the Google account synced to PUBG, and removing access there.

From my experience, you'll have to contact PUBG Mobile support to get your Gmail unlinked. It takes time, but they do respond.
