Just uninstall the game and clear its data from your device. When you reinstall, it won't be linked to your Google account anymore.
First-hand experience here: Go to 'Settings' -> 'Account' -> 'Linking' and click on 'Unlink' next to your Google account. It worked for me!
It's not possible to unlink your Google account yourself. You might need to contact Bandai Namco support to get it done.
