I did this last week. You have to visit the Epic Games website, log in, go to 'Connections' under 'Account Settings', and unlink PlayStation. It's pretty straightforward!

Heads up, here's the quick and dirty on unlinking: Go to the Epic Games website, log into your account, head to the 'Connected Accounts' section, and simply click 'Disconnect' next to PlayStation Network. Boom, done!
