I had to do this recently. Go to https://socialclub.rockstargames.com/, log in, navigate to your settings, and unlink from there. Easy peasy!

You can't unlink directly from the PS4 or PS5. Do it through the Social Club website under settings.

Hey, just go to the Rockstar Social Club website, log in, head over to 'Settings' and 'Linked Accounts,' then unlink your PSN. Simple as that!
