Actually did this last week! Just go to Rockstar Social Club, check settings for 'Linked Accounts,' and there's your Steam link to break. Easy peasy.

I don't see why you'd want to unlink them, but hey, you do you. Just log into Rockstar Social Club, find the 'Linked Accounts' under settings, and there should be an option to disconnect your Steam.
