Unlocking items usually happens as you play more. Play around in the level editor and you'll see new items popping up gradually.
Just play through the game and keep using the level editor. Items will unlock after certain milestones. Patience, young plumber!
Hot take: If you want everything right away, you could always look up manual unlock hacks online, but... *shhh* don't tell Nintendo!
From my experience, simply keep playing and using the editor. Items unlock over time based on usage and time spent creating!
