It's all about beating the Story Mode chapters. As you advance, new characters will join your roster. Fight those demons and collect those slayers!

You can unlock most characters in Demon Slayer: Hinokami Chronicles by progressing through the main storyline. Just slice your way through the chapters and they'll unlock as you go!
