Quick tip: Play through Classic Mode a few times. Incineroar should challenge you around the 8th or 9th unlock.
You can unlock Incineroar by playing through the World of Light story mode or by going through Classic Mode with a specific path. For Classic Mode, start with Samus and keep playing until Incineroar appears.
Honestly, just go through the World of Light. You'll get him eventually and unlock other cool stuff along the way.
