Grind out some Vs. matches! Ken shows up as a challenger after a certain number of battles. Train hard, defeat him, and he's yours!

Just use Classic Mode with Ryu. You'll get Ken fairly quickly that way.

For a quicker unlock, play Vs. matches. You'll probably get Ken after around 100 battles.
