Unlocking mounts in Hogwarts Legacy is super fun! You'll be able to fly around on broomsticks or sprint across the grounds on magical beasts. First things first, you gotta progress through the main story. After a bit, you'll get a quest called 'The High Keeper.' This quest is where you’ll learn to tame and ride a Hippogriff. Broomsticks, on the other hand, come a bit earlier when you complete 'Flying Class' quest. So, keep pushing through those quests, and you'll be zipping around the wizarding world in no time!

I personally unlocked my first mount after a few hours into the game. It was epically magical riding around Hogwarts and beyond. The feeling is unmatched, especially when you first take off on that Hippogriff!
