Just play the game and have fun! Peach will unlock soon enough through various modes, like Classic Mode or World of Light.
Or you can simply fight in Smash battles and hope she randomly challenges you. It takes a bit of patience, but she'll show up!
The quickest way is probably just grinding through the World of Light adventure mode. Find her in the Temple of Light.
