Go to the XMB menu, find Netflix in the TV/Video Services section, press Triangle, and select 'Check for Update.' If there's an update, it will download and install.

I've done this several times: Go to the Netflix app on your PS3, hit Options, and select 'Update App.' Works like a charm!

Simple! Navigate to the PS3's XMB, go to the TV/Video Services section, select Netflix, and it should prompt you to update if there's a new version available.
