First, download the latest Custom Firmware (CFW) from a trusted source. Put it on a USB drive in a folder named 'PS3/UPDATE.' Then, plug the USB into your PS3, go to System Update, and select 'Update via Storage Media.' Follow the on-screen instructions, and you're good to go!

Been there, done that. Make sure the USB is formatted to FAT32, and always verify the MD5 checksum of your CFW file before updating!
