You can also update it via a USB stick. Download the update from the official Xbox website to your PC, transfer it to a USB stick, then plug it into your Xbox 360. Follow the on-screen instructions to complete the update. Old-school style!

From experience, if you're having trouble connecting your Xbox 360 online, you can burn the update to a CD/DVD and install it that way. I've had to resort to this a few times, and it always worked like a charm.
