You can update your Xbox 360 games offline by downloading the update file from the Xbox website on your computer, then transferring it to your console using a USB flash drive. Just make sure the USB drive is formatted to FAT32!

Find the game update online, download it onto a USB, and then plug that into your Xbox 360. Easy-peasy!
