To upgrade the Ghoul race to v2, you need to have it at v1 first. Then, defeat 5 players with the Ghoul Mask equipped and talk to Experimic. For v3, you need to be at v2 and complete a quest from Arowe in the Graveyard for 100 Ectoplasm. Happy hunting!

Basically, get v1 first, beat 5 players while wearing the Ghoul Mask, then visit Experimic to upgrade to v2. For v3, grab 100 Ectoplasm and complete Arowe's quest.
