First, make sure your TV supports 120Hz. Then, go to Settings > General > TV & display options > Refresh rate and select 120Hz.

I had to update my TV's firmware to make it work, so check for updates if it's not showing up.

Just set the game to performance mode if it supports 120 FPS. Not all games do, though!
