From personal experience, plug the USB headset into the PS3, navigate to Settings > Accessory Settings > Audio Device Settings, and select 'USB Headset' as the input and output device. Simple as that!

Easy peasy! Just plug your USB headset into one of the USB ports on your PS3. Go to Settings > Accessory Settings > Audio Device Settings. Set the input and output device to 'USB Headset' and you're good to go. Game on!
