You'll need to download the Bruteforce Save Data tool on your PC, extract your save data, and decrypt it with the program. Afterwards, make the desired edits, re-encrypt, and re-upload to your PS3. Make sure you have a backup, just in case!

First-hand experience here: Download Bruteforce Save Data on your PC, copy saves to a USB, decrypt and modify on PC, then put 'em back on your PS3. It's a bit technical but super satisfying when it works!
