From personal experience, keep your cavalry moving! Cycle charges are the best way to ensure they stay effective and don't get bogged down.
Use cavalry to chase down routing units and prevent them from regrouping, adding insult to injury!
Avoid head-on charges into spears or pikemen, or you'll be sending your cavalry to an early grave!
