From personal experience, make sure you actually have flares equipped on your plane first. Then, hit 'B' when you see missiles incoming. Saved my tail a dozen times!
Don't forget to spam the 'B' button when you're being chased. Works like a charm!
Flares? Just hit 'B.'
You need to map flares to a button if they're not set. Go to 'Controls' -> 'Aircraft' -> 'Countermeasures' and assign it to your preferred button. Fly safe!
