First, make sure motion controls are turned on in the settings. Then, just tilt your Switch to aim while in handheld mode. It's like aiming with a joy-con, but attached!

Tbh, just turn on motion controls in the settings and move the Switch around to aim. Takes some getting used to but it's easier than it sounds.
