A bit unorthodox, but you can also connect the PS5 controller to the PS3 wirelessly. Go to Accessory Settings > Manage Bluetooth Devices, and pair it up. You'll need a PS4 controller nearby to initially navigate the Bluetooth menu though.

Turn on the PS3, plug your PS5 controller into the PS3 console using a USB cable, and the PS3 should recognize it. Bam, you're connected!
