Simply enter combat mode and your turrets will automatically target enemies. Make sure you've got enough power allocated to them!

To use turrets on your ship in Starfield, go to the ship customization menu. Equip your turrets in available weapon slots, then engage enemies using your ship's targeting system for automatic fire. Easy peasy, space breezy!
