To zoom out your GPS in Sons of the Forest, just use the mouse scroll wheel. Scrolling back zooms you out, and scrolling forward zooms in. Easy peasy!

From my experience, just scrolling back on your mouse wheel or using your controller's bumpers will zoom out your GPS view.
