So, Kaneki and Touka end up together and have a kid. They open a coffee shop and try to live peacefully. It's a bittersweet ending, but it wraps up most of the main storylines.

As a hardcore Tokyo Ghoul fan, I can tell you the ending is pretty satisfying. Kaneki and Touka manage to create a peaceful life together after so many struggles. The final arc is intense but beautifully concludes their journey.
