I'd say if you're into a solo, immersive experience, Subnautica takes the cake. But if you want multiplayer and massive beasts, Ark is your game.
Having poured hundreds of hours into both, I can say they each shine in their own way. Subnautica wins in story and atmosphere, while Ark nails the multiplayer survival aspect.
