From my experience, playing Dark Souls 3 on PS5 feels way smoother compared to the PS4. Definitely feels like it hits that 60 FPS mark more often!

Nope, Dark Souls 3 doesn't run at a native 60 FPS on PS5. You might get better performance, but it's not locked to 60 FPS.
