Canon is what you make of it, IMO. Yeah, the manga is the 'official' story, but some filler arcs in the anime are super fun and add to the characters. Just enjoy the ride!
Strictly speaking, not all of it. The manga is the true canon. The anime adds filler episodes that aren't in the manga. Stick to the manga if you're a purist.
Fillers can be skipped if you're a canon purist. But honestly, some are pretty entertaining and give more screen time to your fav characters. Why not give 'em a chance?
