Not all of them. While some rare cards, especially from the early editions, are sky-rocketing in price, common cards aren't really moving much in value. It's all about rarity and demand.

From my experience, yes! I found an old binder of Pokemon cards in my attic, and after a bit of research and getting some appraised, I made a pretty penny. It's definitely worth digging out your old collection!
