Tokyo Ghoul:re anime is more faithful to the manga than Root A, but it still compresses a lot of content. Basically, the first season is canon, Root A isn't, and Tokyo Ghoul:re kind of is.

The main Tokyo Ghoul anime follows the manga pretty closely until the second season (Root A), which diverges significantly from the source material. So, it's a mix of canon and non-canon elements.
