If you're looking for the best experience, start with XCOM 1 then move on to 2. Both are excellent, but starting with 1 gives you the full story arc.
Honestly, jump straight into XCOM 2. It's a real masterpiece and the improvements over XCOM 1 are significant. You won't regret it!
