Honestly, both the English and Japanese versions of Fullmetal Alchemist: Brotherhood are top-notch! The English dub features some fantastic voice acting with Vic Mignogna as Edward Elric, so you can't go wrong either way.

Go for the Japanese with subtitles! It really captures the original emotion of the characters and the voice acting is superb.
