FMA 2003's anime-only (filler) episodes are 4, 10-12, 17, 19, 24, 37-51. Brotherhood is true to the manga, no fillers.

In the 2003 Fullmetal Alchemist anime, episodes 4, 10, 11, 12, 17, 19, 24, 37-51 are anime-only. The 2009 Brotherhood series stays more faithful to the manga, so no filler there!

Honestly, just skip straight to Brotherhood. The 2003 version has filler, but Brotherhood follows the manga closely.
